Camp oven banana bread recipe

Banana bread cooked in a camp oven.

We all know and love the taste of fresh banana bread in the kitchen, well imagine being able to enjoy that feeling when you’re camping!

 We bought this bread tin camp oven on our trip in WA and it’s now possibly my favourite piece of camping equipment. It was unfortunately the last one and had no packaging with it as it was the one on display so I can’t even share with you what the brand is but if you can find one, treat yourself and grab it! There is honestly nothing better than fresh banana bread when you’re on the road. We spent 5 weeks perfecting this recipe, we had lots of wins and a couple of losses so thought I’d share with you what we learnt and the recipe we now use to get amazing banana bread every time!

Like all camp cooking, it really does all depend on the heat of your fire. So, spend the time getting some good coals going and remember to preheat your oven for 10mins to warm it up (like you would a normal oven).

Utensils:

Camp oven bread tin

Coals/fire

Bowl

Fork or masher

Spatula

Measuring cups

Welding gloves or heat protecting gloves

Chopping board

Ingredients:

2 x Bananas (the browner the better)

1 Cup Self raising flour

1/3 Cup Brown Sugar

1tsp Cinnamon

¼ cup vegetable oil

2 eggs

Honey and oats optional

Freshly baked banana bread on a chopping board

Recipe:

1. Mash the bananas well with fork.

2. Pour all ingredients into bowl and mix well.

3. Once the oven is preheated, carefully remove from the fire and pour a little more oil inside and shake it around to coat the inside of the oven

4. Pour the batter into the oven and sprinkle with some oats or berries if you have them and finish it off with some honey drizzled on top.

5. Shovel some coals off the fire onto another fire pit/or a clear area of ground, you want a small layer of coals underneath your oven.

Then place the oven on top of these coals and shovel more coals to sit on top of the lid. You want more coals on top to help create the heat all around the oven.

Cooking time will vary depending on your camp oven size and coal heat, so keep an eye on it and check every 10mins or so until ready.

Carefully flip the bread out onto a chopping board and serve with lots of butter!

This will be one of the best banana bread recipes you’ll ever try, not because it actually is but because everything tastes so much better when you’re camping!
