Hot Cross Bun Bread and Butter Pudding.

Easter definitely looked and felt a little different this year. But even thought we couldn’t be camping this year, there is one tradition that we weren’t going to give up! Our Hot Cross Bun Bread and Butter Pudding is a favourite of ours, it’s super easy and a delicious treat to share with the whole family.

Ingredients:

  • Packet of Hot Cross Buns

  • 500ml Cream

  • 4 Eggs room temp

  • 1/3 Cup of baileys (optional)

  • 1/3 Cup caster sugar

  • Chocolate chips or small easter eggs

Step 1 - Preheat oven to 160 degrees celsius.

Step 2 - Cut the hot cross buns in half and then roughly chop the bases up into smaller pieces.

Step 3 - Whisk cream, sugar, eggs and baileys together in a large bowl.

Step 4 - Put the base pieces of the buns into the cream mixture and leave to soak for 5mins.

Step 5 - Prepare a 4-5cm deep baking dish. Scoop out the bread pieces from the cream mixture and spread evenly into the dish.

Step 6 - Position the bun lids on top and pour the remainder of the cream mixture over the top. Finish by sprinkling choc chips or Easter eggs on top.

Step 7 - Cover loosley with foil and place in the oven for 15mins.

Step 8 - Remove foil and cook for a further 10-15mins or until the cream mixture forms a custard.

Step 9 - Allow to cool a little before serving with ice cream!

Step 10 - All that’s left to do now is enjoy!
